Bacon Corn Cheese

Ingredients

  • 1 1/2 cups corn
  • 2 strips bacon
  • 1 tbsp sriracha
  • 1 tbsp mayo
  • 3 tbsp mozzarella
  • Furikake seasoning

Instructions

  1. Cook bacon until crispy, then use the bacon oil to stir-fry the corn.
  2. Add sriracha and mayo, stirring until the mixture starts to caramelize.
  3. Sprinkle mozzarella on top, cover, and let it melt for 2-3 minutes.
  4. Uncover and finish with a sprinkle of furikake. Enjoy it by itself or with corn tortillas.
