Crispy Rice and Hawaiian Garlic Shrimp

Ingredients

  • 1 lb shrimp
  • 5 tbsp butter
  • 15 cloves garlic (or more based on preference)
  • ½ lemon
  • 1 cup cooked rice
  • Scallions, chopped
    Shrimp Coating:
  • 3 tbsp rice flour
  • 3 tbsp cornstarch
  • 2 tsp salt
  • 1 tbsp paprika
  • 1 tsp garlic powder

Instructions

  1. Coat the shrimp evenly with the shrimp coating mixture.
  2. In a pan, melt butter over low heat and sauté the garlic until fragrant and translucent.
  3. Increase the heat to medium, add the shrimp, and cook until golden and fully coated in garlic. Squeeze in fresh lemon juice.
  4. Remove the shrimp and set aside. In the same pan, add cooked rice to the remaining garlic butter.
  5. Use a press or spatula to firmly press down the rice, allowing a crispy crust to form on the bottom.
  6. Once the rice is golden and crispy, sprinkle with chopped scallions and mix well.
  7. Transfer the rice to a plate, arrange the shrimp on top, and serve with a slice of lemon.
