Crispy Rice and Hawaiian Garlic Shrimp
Ingredients
- 1 lb shrimp
- 5 tbsp butter
- 15 cloves garlic (or more based on preference)
- ½ lemon
- 1 cup cooked rice
- Scallions, chopped
Shrimp Coating:
- 3 tbsp rice flour
- 3 tbsp cornstarch
- 2 tsp salt
- 1 tbsp paprika
- 1 tsp garlic powder
Instructions
- Coat the shrimp evenly with the shrimp coating mixture.
- In a pan, melt butter over low heat and sauté the garlic until fragrant and translucent.
- Increase the heat to medium, add the shrimp, and cook until golden and fully coated in garlic. Squeeze in fresh lemon juice.
- Remove the shrimp and set aside. In the same pan, add cooked rice to the remaining garlic butter.
- Use a press or spatula to firmly press down the rice, allowing a crispy crust to form on the bottom.
- Once the rice is golden and crispy, sprinkle with chopped scallions and mix well.
- Transfer the rice to a plate, arrange the shrimp on top, and serve with a slice of lemon.
