Ingredients
- 10-15 chicken wings
- 1 cup garlic cloves (adjust to taste)
- 1 shallot
- 1-inch piece of ginger
- 1/2 cup water
- 2 tsp curry powder
- 2 tsp chili powder
- 2 tsp salt
- 1.5 tsp sugar
- 1/2 cup potato starch
- Kaffir lime leaves (optional)
Instructions
- Blend the garlic, shallot, ginger, and water until smooth.
- In a bowl, mix the chicken wings with the blended garlic paste, seasoning, and potato starch. Let marinate for 20-30 minutes.
- Heat cooking oil in a skillet over high heat. Fry the chicken until golden brown.
- Halfway through frying, add the garlic cloves and kaffir lime leaves (if using).
- Cook until the chicken reaches an internal temperature of 165°F
- For extra crispy bits, mix 2-3 tbsp of water into the remaining batter. Fry the batter while whisking until crispy, then sprinkle over the chicken.
