Garlic Fried Chicken

Ingredients

  • 10-15 chicken wings
  • 1 cup garlic cloves (adjust to taste)
  • 1 shallot
  • 1-inch piece of ginger
  • 1/2 cup water
  • 2 tsp curry powder
  • 2 tsp chili powder
  • 2 tsp salt
  • 1.5 tsp sugar
  • 1/2 cup potato starch
  • Kaffir lime leaves (optional)

Instructions

  1. Blend the garlic, shallot, ginger, and water until smooth.
  2. In a bowl, mix the chicken wings with the blended garlic paste, seasoning, and potato starch. Let marinate for 20-30 minutes.
  3. Heat cooking oil in a skillet over high heat. Fry the chicken until golden brown.
  4. Halfway through frying, add the garlic cloves and kaffir lime leaves (if using).
  5. Cook until the chicken reaches an internal temperature of 165°F
  6. For extra crispy bits, mix 2-3 tbsp of water into the remaining batter. Fry the batter while whisking until crispy, then sprinkle over the chicken.
