Spam and Egg Chips on Spicy Noodles

Ingredients

Rice Paper Chips

  • 4 sheets rice paper
  • 8 sheets seaweed snacks
  • 2 eggs
  • 8 thin slices of spam
  • 2 stalks scallions, chopped
  • Cooking oil

Spicy Noodles

  • 2 packs buckwheat noodles
  • 2 tbsp gochujang
  • 1 tbsp gochugaru
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 1 tsp minced garlic
  • 1 tbsp toasted sesame seeds
  • ½ boiled egg
  • Water for boiling

Instructions

  1. Rice Paper Chips: Layer rice paper with seaweed, egg, spam, and scallions. Cover with another wet rice paper, seal, and cut into four pockets. Fry at 325°F until golden.
  2. Spicy Noodles: Mix seasonings in a bowl. Boil and drain noodles, then toss in sauce. Top with a boiled egg and serve with crispy chips.
