Roasted Butternut Squash

Ingredients

  • 1 butternut squash
  • 1 cup walnuts
  • 1 shallot
  • 2 cloves garlic
  • 4 slices bacon
  • 1/4 cup dried cranberries
  • salt and pepper as needed
  • 1 tbsp brown sugar
  • 1 tbsp olive oil
  • 1/2 tsp cinnamon
  • 1 rosemary
  • 1/4 cup feta cheese

Instructions

  1. Preheat to 450°F
  2. Season the squash with salt, pepper, brown sugar and olive oil. Bake for 30 minutes on the flesh side down.
  3. In a pan, cook bacon until crispy. Add shallots and garlic; sauté until translucent.
  4. Stir in rosemary, cranberries, cinnamon, and adjust salt and pepper. Cook briefly.
  5. Transfer the mixture to a bowl and mix in walnuts. Stuff into baked squash and top with feta.
  6. Return to the oven for 5-10 minutes, until heated through.
