Ingredients
- 1 butternut squash
- 1 cup walnuts
- 1 shallot
- 2 cloves garlic
- 4 slices bacon
- 1/4 cup dried cranberries
- salt and pepper as needed
- 1 tbsp brown sugar
- 1 tbsp olive oil
- 1/2 tsp cinnamon
- 1 rosemary
- 1/4 cup feta cheese
Instructions
- Preheat to 450°F
- Season the squash with salt, pepper, brown sugar and olive oil. Bake for 30 minutes on the flesh side down.
- In a pan, cook bacon until crispy. Add shallots and garlic; sauté until translucent.
- Stir in rosemary, cranberries, cinnamon, and adjust salt and pepper. Cook briefly.
- Transfer the mixture to a bowl and mix in walnuts. Stuff into baked squash and top with feta.
- Return to the oven for 5-10 minutes, until heated through.
