Ingredients
- 3 cups day-old cooked rice
- 3 eggs
- 1/4 cup chopped scallions
- Salt and pepper
- 3 slices Spam, cubed
- Seasoning seaweed
Sauce
- 1 tbsp light soy sauce
- 1/2 tsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tbsp Shaoxing wine
- 1 tbsp sesame oil
- 1/4 tsp white pepper powder
Instructions
- In a wok or pan, cook the Spam until golden, then set aside.
- In the same wok, cook the scallions, then crack in the eggs and scramble until halfway cooked.
- Add the rice and Spam, then drizzle the sauce over everything.
- Stir-fry on high heat for 2-3 minutes.
- Sprinkle with scallions and seasoning seaweed, and serve!
