Fluffy Souffle Omelette

Ingredients

  • 3 eggs
  • 1 tsp sugar
  • 2 tbsp heavy cream
  • 1/2 tsp salt
  • 2 tbsp shredded mozzarella cheese
  • 1 lobster
  • Butter

Instructions

  1. Separate the egg yolks from the whites.
  2. In a stand mixer or with a hand mixer, whisk the egg whites with the sugar and salt until stiff peaks form
  3. In a small bowl, beat the egg yolks with the heavy cream.
  4. Gently fold the yolk mixture into the beaten egg whites.
  5. In a pan, sear the lobster with butter.
  6. Heat the same pan over medium-low heat and add butter.
  7. Pour the egg mixture into the pan, cover with a lid, and cook for 2 minutes.
  8. Once the bottom starts to crisp, sprinkle mozzarella cheese and add lobster pieces.
  9. Fold the omelette in half and cook for another 1-2 minutes and enjoy!
