Ingredients
- 2 corns
- 1 shallot
- 1 tbsp garlic
- 2 red chillies
- 1 tbsp scallions
- 1 tbsp cilantro
- 3 kafir lime leaves
- 1 egg
- salt/pepper
- 3 tbsp rice flour
- 2 tbsp AP flour
Tamarind Sauce
- 5-6 garlic
- 1 tsp ginger
- 2 Thai chillies
- 2 tbsp cilantro
- 3 tbsp tamarind juice
- 1 tbsp brown sugar
- 1 tbsp sweet chili sauce
- salt as needed
Instructions
- In a large bowl, combine all the ingredients and mix well.
- Heat oil in a frying pan to 365°F (185°C).
- Using a spoon, drop spoonfuls of the corn mixture into the hot oil and fry until golden brown.
- Optionally, add unpeeled garlic and kaffir lime leaves to the oil for extra flavor while frying.
- To make the tamarind sauce, mix all the sauce ingredients in a bowl until well combined.
- Serve the fritters hot with the tamarind sauce on the side.
