Ingredients
- 4 chicken legs
- 3-4 slices of ginger
- 1 scallion
- Goji berries/dates
- Shaoxing wine
Sauce
- 10 cloves of garlic
- Scallions
- Salt to taste
- 1 tbsp brown sugar
- 2 tbsp shallot oil
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
Instructions
Method 1
- Steam the chicken with slices of ginger for about 25 minutes.
- Place a small bowl upside down in the middle of the plate with goji berries and dates to collect chicken soup from the steaming.
Method 2
- Poach the chicken with ginger slices, scallion, and Shaoxing wine for about 20 minutes. Use a thermometer to ensure chicken is cooked.
- Transfer the chicken to an ice bath to shock.
- Prepare the garlic shallot oil sauce and serve with the chicken.
