Tofu Satay

Ingredients

  • 1 block of firm tofu
  • 3 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1/2 cup coconut milk
  • 1 tbsp brown sugar
  • 1 tbsp red curry paste
  • 2-3 cloves garlic, minced
  • 1 tsp grated ginger
  • 1-2 tbsp water
  • 1-2 tbsp lime juice
  • Scallions, cilantro, chili oil, and crushed peanuts for garnish
  • Salt and pepper, to taste
  • Cooking oil

Instructions

  1. Cut the tofu into blocks and thread them onto skewers.
  2. In a pan over medium-high heat, sear the tofu until golden brown.
  3. Add the peanut sauce and cook for an additional 2-3 minutes.
  4. Garnish with scallions, cilantro, chili oil, and crushed peanuts before serving.
