Ingredients
- 1 russet potato
- 1 avocado
- 1 tbsp garlic butter
- 1 long pickle slice
- 1 slice of ham
- 1 egg
- 3 cherry tomatoes
- Shredded cheddar and monterey jack mix
Instructions
- Thinly slice the potato (a mandoline works great for this).
- Lay the slices out in an overlapping square shape on a lined baking tray.
- Sprinkle a generous mix of cheddar and monterey jack cheese over the top.
- Bake at 360°F for 10 minutes or until crispy and golden.
- Once out of the oven, brush with garlic butter and layer on your toppings, I used sliced avocado, pickle, ham, sunny side-up egg, and halved cherry tomatoes. Feel free to customize with your favorite fillings!
