Sliced Potato Wrap

Ingredients

  • 1 russet potato 
  • 1 avocado 
  • 1 tbsp garlic butter 
  • 1 long pickle slice 
  • 1 slice of ham 
  • 1 egg 
  • 3 cherry tomatoes 
  • Shredded cheddar and monterey jack mix  

Instructions

  1. Thinly slice the potato (a mandoline works great for this). 
  2. Lay the slices out in an overlapping square shape on a lined baking tray. 
  3. Sprinkle a generous mix of cheddar and monterey jack cheese over the top. 
  4. Bake at 360°F for 10 minutes or until crispy and golden. 
  5. Once out of the oven, brush with garlic butter and layer on your toppings, I used sliced avocado, pickle, ham, sunny side-up egg, and halved cherry tomatoes. Feel free to customize with your favorite fillings!
