Golden Fried Rice

Ingredients

  • 2 cups leftover cooked rice 
  • 3 eggs (yolks and whites separated) 
  • 2 scallions, chopped (separate white and green parts) 
  • 5–6 garlic cloves, thinly sliced 
  • 1 shallot, finely chopped 
  • 2 tbsp Mama Nyonya Garlic Chili Sauce 
  • ½ cup Spam, cubed 
  • Salt and pepper, to taste 
  • Cooking oil 

Instructions

  1. In a large bowl, mix the cooked rice with the egg yolks until the grains are evenly coated. 
  2. In a pan over medium heat, cook the cubed Spam until golden and crispy. Set aside. 
  3. Heat a bit of oil in the same pan over medium-high heat. Sauté the white parts of the scallions, garlic, and shallot until fragrant. 
  4. Add the egg yolk-coated rice to the pan. Stir-fry until the grains loosen up and are lightly toasted. Season with salt and pepper to taste. 
  5. Push the rice to the edges of the pan to create a well in the center. Add the egg whites and the garlic chili sauce. Scramble lightly, then stir everything together to combine. 
  6. Return the cooked Spam to the pan. Toss well and stir-fry for another 2–3 minutes until everything is fully incorporated and heated through. 
  7. Garnish with the green parts of the scallions and serve hot.
