Ingredients
- 2 cups leftover cooked rice
- 3 eggs (yolks and whites separated)
- 2 scallions, chopped (separate white and green parts)
- 5–6 garlic cloves, thinly sliced
- 1 shallot, finely chopped
- 2 tbsp Mama Nyonya Garlic Chili Sauce
- ½ cup Spam, cubed
- Salt and pepper, to taste
- Cooking oil
Instructions
- In a large bowl, mix the cooked rice with the egg yolks until the grains are evenly coated.
- In a pan over medium heat, cook the cubed Spam until golden and crispy. Set aside.
- Heat a bit of oil in the same pan over medium-high heat. Sauté the white parts of the scallions, garlic, and shallot until fragrant.
- Add the egg yolk-coated rice to the pan. Stir-fry until the grains loosen up and are lightly toasted. Season with salt and pepper to taste.
- Push the rice to the edges of the pan to create a well in the center. Add the egg whites and the garlic chili sauce. Scramble lightly, then stir everything together to combine.
- Return the cooked Spam to the pan. Toss well and stir-fry for another 2–3 minutes until everything is fully incorporated and heated through.
- Garnish with the green parts of the scallions and serve hot.
