Rotisserie Caramelized Pineapple

Ingredients

  • 1 whole pineapple, peeled 
  • 2 tbsp brown sugar 
  • 1 tbsp ground cinnamon 
  • 2 tbsp butter, softened 
  • 1 tsp salt 
  • 1/2 lemon 
  • Drizzle of honey 
  • Tajín (for a spicy-salty kick) 
  • A scoop of your favorite ice cream 
  • Strawberries or cherries (optional, for serving) 

Instructions

  1. Peel the pineapple. You can core it if you like, but it’s not necessary. 
  2. In a bowl, mix the brown sugar, cinnamon, butter, and salt to make a quick marinade. 
  3. Rub the mixture all over the pineapple until well coated. 
  4. Skewer the pineapple on a rotisserie stick and roast at 425°F (220°C) for about 30 minutes, or until golden and caramelized. 
  5. Slice and serve warm with a squeeze of lemon juice, a drizzle of honey, a dusting of Tajín, and a scoop of ice cream. 
  6. Add fresh strawberries or cherries on the side for a juicy, colorful finish.
