Ingredients
- 1 whole pineapple, peeled
- 2 tbsp brown sugar
- 1 tbsp ground cinnamon
- 2 tbsp butter, softened
- 1 tsp salt
- 1/2 lemon
- Drizzle of honey
- Tajín (for a spicy-salty kick)
- A scoop of your favorite ice cream
- Strawberries or cherries (optional, for serving)
Instructions
- Peel the pineapple. You can core it if you like, but it’s not necessary.
- In a bowl, mix the brown sugar, cinnamon, butter, and salt to make a quick marinade.
- Rub the mixture all over the pineapple until well coated.
- Skewer the pineapple on a rotisserie stick and roast at 425°F (220°C) for about 30 minutes, or until golden and caramelized.
- Slice and serve warm with a squeeze of lemon juice, a drizzle of honey, a dusting of Tajín, and a scoop of ice cream.
- Add fresh strawberries or cherries on the side for a juicy, colorful finish.
