Ingredients
- 4 sheets of rice paper
- 6 shrimp
- 6 imitation crab sticks
- 1 scallion, finely chopped
Instructions
- Split each imitation crab stick in half lengthwise to make 12 pieces.
- Place one dry sheet of rice paper on a flat surface. Arrange half of the crab sticks evenly, leaving about an inch of space between each. Sprinkle chopped scallions over the top.
- Lightly dip a second sheet of rice paper in water to soften, then place it over the first sheet to cover the crab sticks. Let it sit for a few seconds to adhere and form a pocket.
- Use kitchen scissors to cut around each filling to create individual rice paper squares.
- Repeat the same steps using the shrimp for the second batch.
- Heat oil in a frying pan over medium-high heat. Once hot, deep-fry the rice paper pockets until they puff up and become golden and crispy on all sides. Remove and drain on paper towels.
- Serve hot and enjoy as a crispy snack!
Tip: Don’t wet the first rice paper sheet so you can easily place and position your fillings without it sticking. Only dip the top layer to seal and form a pocket. Let it sit for a few seconds so it sticks properly before cutting.
