Sunny Side Potato

INGREDIENTS

  • 1 Yukon Gold potato
  • 1 carrot
  • 3/4 cup all-purpose flour
  • 1 teaspoon salt
  • A pinch of black pepper
  • 2 tablespoons water (adjust as needed)
  • 1 whole egg
  • Additional egg yolks (depending on how many you’re making)
  • Garnish: toasted sesame seeds, chopped scallions, and red pepper flakes

INSTRUCTIONS

  1. Shred the potato and carrot, then mix with flour, salt, pepper, water, and the whole egg until well combined.
  2. Heat a bit of oil in a pan and add the mixture, shaping it into a round patty.
  3. Cook until the bottom is golden and crispy, then carefully flip to crisp the other side.
  4. Gently add an egg yolk to the center of the patty.
  5. Cover with a lid and continue cooking until the yolk is set, sunny side up.
  6. Remove from heat, garnish with sesame seeds, scallions, and red pepper flakes, and enjoy immediately!
