Parmesan Crusted Dumplings

Ingredients:

For the Dumplings: 

  • 16 dumplings or potstickers (frozen or fresh) 
  • 1 cup shredded Parmesan cheese 
  • 1/2 cup shredded cheddar cheese 
  • 1 tbsp chili powder (optional, to taste) 
  • Neutral oil spray (or a light drizzle) 

For the Ginger Scallion Sauce: 

  • 1 cup scallions (green onions), finely chopped 
  • 2–3 tbsp fresh ginger, finely minced or grated 
  • 1/2 tsp salt (adjust to taste) 
  • 1/3 cup neutral oil (like grapeseed, canola, or vegetable oil) 
  • Optional: splash of soy sauce or rice vinegar for added depth 

Instructions:

  1. Lightly pan-fry the dumplings in a bit of oil until the bottoms are just starting to get crispy. They don’t need to be fully cooked yet. 
  2. Line a baking sheet with parchment paper. Evenly sprinkle the Parmesan and cheddar over the sheet to form a cheese layer. 
  3. Place the partially cooked dumplings on top of the cheese layer. Sprinkle with chili powder if using. 
  4. Bake at 400°F (200°C) for about 20 minutes, or until the cheese is golden and crisp and the dumpling skins are crackly. 
  5. While the dumplings bake, prepare the ginger scallion sauce. Place scallions, ginger, and salt in a heatproof bowl. Heat oil in a pan until shimmering, then carefully pour over the mixture. Stir to combine. Add a splash of soy sauce or vinegar if desired. Let cool slightly. 
  6. Once out of the oven, serve the crispy cheese-crusted dumplings immediately with the ginger scallion sauce on the side.
