Rice Paper Peanut Noodles

Ingredients

  • 6 sheets rice paper
  • 3 cups lukewarm water
  • 1 tbsp crushed toasted peanuts (for garnish)
  • 1 tbsp chopped cilantro (for garnish)
  • Optional: 2 tbsp cooked ground pork

Peanut Sauce

  • 2 tbsp minced garlic
  • 1 tbsp chopped scallions
  • 1 tbsp chili powder
  • 1 tbsp chili flakes
  • ½ tsp sugar
  • ½ tsp salt
  • 1 tbsp soy sauce
  • 1 tbsp Chinese black vinegar
  • 3 tbsp peanut butter
  • ¼ cup water
  • 2 tbsp hot oil

Instructions

  1. Stack two sheets of rice paper and dip them into lukewarm water until soft and pliable. Once rehydrated, lay them flat and cut into noodle-like strips. Repeat with the remaining sheets. Place all cut “noodles” back into lukewarm water to soak briefly, this prevents sticking and make sure the right chewy texture.
  2. In a bowl, combine garlic, scallions, chili powder, chili flakes, sugar, salt, soy sauce, vinegar, peanut butter, and water. Heat 2 tablespoons of oil until hot and carefully pour over the mixture. Stir until smooth and well combined.
  3. If using ground pork, stir-fry it with a pinch of salt and pepper until fully cooked.
  4. Drain the rice paper noodles and toss them in the prepared peanut sauce. Top with crushed peanuts, cilantro, and ground pork if using. Serve immediately and enjoy!
