Enoki Mushrooms Fried Egg

Ingredients:

  • 1 bunch enoki mushrooms
  • 1 egg
  • Salt and pepper, to taste
  • 3 tbsp cooking oil

Instructions:

  1. Rinse the enoki mushrooms thoroughly and trim off the root ends.
  2. Gently separate the egg yolk from the egg white.
  3. In a cold pan (before adding oil), arrange the enoki mushrooms in a circular nest-like shape.
  4. Pour in the cooking oil generously around and over the mushrooms. Turn the heat to medium and cook until the mushrooms are golden and crispy.
  5. Carefully pour the egg white over the center of the mushrooms, then place the egg yolk on top. Season with salt and pepper to taste.
  6. Cook until the egg is set to your liking. Remove from the pan and serve immediately. Enjoy!
