Shaved Tomato Cucumber Noodles

Ingredients

Shaved Ice:

  • 1 ripe tomato, washed and frozen overnight
  • 1 cucumber, washed and frozen overnight

Noodle Bowl:

  • 1 pack buckwheat noodles
  • ½ fresh tomato, diced
  • 1 avocado, sliced
  • 1 soft-boiled egg
  • 1 cucumber, julienned
  • 1 tbsp gochujang
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce

Instructions

  1. Thoroughly wash the tomato and cucumber, then freeze them overnight.
  2. Using a microplane or fine grater, shave thin layers of the frozen tomato and cucumber. Alternate the shavings and arrange on a serving plate like a refreshing ice bed.
  3. Cook the buckwheat noodles according to package instructions, then rinse under cold water and drain.
  4. Top the noodles with fresh tomato, avocado, egg, and cubed cucumber.
  5. Drizzle with gochujang, sesame oil, and soy sauce. Mix everything together gently.
  6. Serve over the shaved tomato-cucumber ice and enjoy a refreshing, savory summer noodle dish!
