Ingredients
- 2 thick slices of watermelon
- 4 thin slices of red onion
- 2 slices of fresh mozzarella
- 3 pickle slices
- 4 fresh basil leaves
- 1 tbsp mustard seeds
- A drizzle of balsamic vinegar
- A drizzle of olive oil
Instructions
- Cut the watermelon into two even, thick slices to serve as the sandwich “buns.”
- Layer the mozzarella, red onion, pickles, basil, and mustard seeds between the watermelon slices.
- Drizzle with olive oil and balsamic vinegar.
- Slice the sandwich in half and enjoy immediately!
