Summer Stone Fruits Toast

Ingredients

  • 3 pretzel buns
  • 1 white peach
  • 1 yellow peach
  • 1 nectarine
  • 1 plum
  • 1 apricot
  • 5 cherries
  • 1 sprig thyme
  • 1 tbsp extra virgin olive oil (EVOO)
  • 1 tbsp vinegar
  • Salt and pepper, to taste
  • Burrata cheese
  • Honey, for drizzling
  • 1 pack prosciutto
  • Fresh basil, for garnish

Instructions

  1. Wash all the fruits thoroughly, then slice them thinly.
  2. In a bowl, toss the sliced fruit with salt, pepper, vinegar, thyme, and olive oil. Set aside to marinate.
  3. Lightly toast the pretzel buns. Spread burrata over each bun and top with the marinated stone fruits.
  4. For a savory variation, add a layer of prosciutto along with the burrata instead of topping with fruit.
  5. Drizzle with honey, then garnish with fresh basil and thyme. Serve immediately and enjoy!
