Ingredients
- 7 slices cold smoked salmon
- 1 can wild-caught tuna
- ½ avocado
- ½ cup sushi rice
- 1 tbsp tobiko (flying fish roe)
- 2 sheets nori
- 1 cucumber
- Toasted sesame seeds, for garnish
Instructions
- In a lunchbox or mold, start by layering the cold smoked salmon on the bottom.
- Add avocado slices evenly on top of the salmon, followed by a layer of sushi rice.
- Add the tuna, then place one sheet of nori on top. Layer cucumber slices and another layer of rice, then sprinkle with tobiko and top with the second sheet of nori.
- Press the layers firmly so everything holds together.
- Carefully flip the lunchbox upside down so the layered sushi slides out.
- Cut into bite-sized pieces, sprinkle with toasted sesame seeds, and enjoy!
