Lazy Rice Burger

Ingredients

  • 1 cup cooked sushi rice
  • 1 tbsp furikake
  • 1 tbsp tobiko (flying fish roe)
  • 1 mini cucumber, thinly sliced
  • 2 tbsp tuna
  • 1 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 fried egg
  • ½ avocado, sliced

Instructions

  1. Cook the sushi rice according to package directions, then stir in the furikake for extra flavor.
  2. Line a small round bowl with plastic wrap. Add the rice and press it along the sides to form a rounded “bun” shape.
  3. Sprinkle the tobiko evenly over the rice.
  4. Layer in the cucumber slices, followed by the tuna.
  5. Drizzle with mayonnaise and sriracha.
  6. Add the avocado slices, then top with the remaining rice to complete the “burger.”
  7. Pull the edges of the plastic wrap together and twist to secure everything tightly.
  8. Let it rest for a minute to set the shape, then slice in half and enjoy!
