Garlic Butter Shrimp Toast

Ingredients

  • 6 slices white bread
  • 1 lb ground shrimp
  • 1 cup fresh corn kernels (canned is fine)
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1 tbsp toasted sesame seeds
  • Black pepper, to taste
  • 1 tbsp cornstarch
  • 1 tsp sugar
  • 3 slices cheddar cheese

Garlic Butter

  • 1 tbsp minced garlic
  • 1 cup unsalted butter, melted
  • 1 tbsp parsley

Instructions

  1. Trim the crusts off the bread and cut each slice into 4 equal squares. Do the same with the cheddar slices so you have small cheese squares.
  2. Make the garlic butter by mixing the melted butter, minced garlic, and parsley until well combined.
  3. In a bowl, combine the ground shrimp, corn, garlic powder, salt, sugar, sesame seeds, black pepper, and cornstarch. Mix until fully incorporated.
  4. Take one bread square and spread about 1 tablespoon of the shrimp mixture on top. Place a cheddar square in the center, then add another tablespoon of shrimp mixture over it, sealing the cheese inside. Top with a second bread square and gently press around the edges, smoothing the shrimp mixture so nothing spills out.
  5. Generously brush each assembled toast with the garlic butter.
  6. Air fry at 385°F for 15 minutes, or until golden and cooked through.
