Braised Fondant Potatoes

Ingredients

  • 2 large potatoes
  • 2 tbsp butter
  • Lots of garlic
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sweet soy sauce
  • 1/4 tsp sugar
  • 1 tsp cornstarch
  • 1 cup chicken stock
  • Red chili peppers
  • Fresh rosemary and thyme

Instructions

  1. Peel the potatoes and use a cookie cutter to shape them into neat cylinders. Lightly score both sides to help them absorb flavor.
  2. Heat oil in a skillet and sear the potatoes on both sides until deeply golden and crisp.
  3. Push the potatoes to one side of the pan and add the butter to the other. Once melted, add the garlic and red chili peppers, cooking for about 2 minutes until fragrant.
  4. Stir in the soy sauce, sweet soy sauce, oyster sauce, sugar, cornstarch, and chicken stock. Add the rosemary and thyme on top for aroma.
  5. Simmer over medium-low heat, basting occasionally, until the potatoes are tender and infused with the savory sauce.
