Ingredients
- 3 lb boneless prime rib
- 3 tbsp coarse salt
- 4 sprigs thyme and rosemary
- 1 stick unsalted butter
- 9–10 garlic cloves
- 1 tbsp Sichuan peppercorn powder
Instructions
- Blend the coarse salt with 2 sprigs of rosemary until combined.
- Rub the rosemary salt all over the prime rib, then refrigerate overnight.
- Blend the butter, garlic, remaining rosemary, and Sichuan peppercorn powder until smooth.
- Rub the garlic herb butter evenly over all sides of the meat.
- Roast in the oven at 250°F for about 2 hours.
- Remove from the oven, let it rest, slice, and enjoy!
