Prime Rib Roast

Ingredients

  • 3 lb boneless prime rib
  • 3 tbsp coarse salt
  • 4 sprigs thyme and rosemary
  • 1 stick unsalted butter
  • 9–10 garlic cloves
  • 1 tbsp Sichuan peppercorn powder

Instructions

  1. Blend the coarse salt with 2 sprigs of rosemary until combined.
  2. Rub the rosemary salt all over the prime rib, then refrigerate overnight.
  3. Blend the butter, garlic, remaining rosemary, and Sichuan peppercorn powder until smooth.
  4. Rub the garlic herb butter evenly over all sides of the meat.
  5. Roast in the oven at 250°F for about 2 hours.
  6. Remove from the oven, let it rest, slice, and enjoy!
