Ingredients
- 3 ripe avocados
- 1/2 cup kefir
- 1 tbsp honey
- 2 tbsp matcha powder
- 1 tsp salt
- 1 cup heavy cream
- 1/3 cup granulated sugar
- 2 1/2 tbsp fresh lemon juice
Instructions
- In a blender, combine the avocados, kefir, honey, matcha powder, and salt. Blend until completely smooth and creamy. Set aside.
- In a small saucepan, heat the heavy cream and sugar over medium heat, stirring until the sugar fully dissolves. Bring to a gentle simmer and cook for about 3 minutes.
- Remove from heat and stir in the lemon juice. For an ultra-smooth texture, strain the mixture.
- Gently whisk the warm cream mixture into the avocado blend until fully incorporated and silky smooth.
- Pour the mixture into cleaned avocado shells (or small serving cups). Refrigerate for at least 3–4 hours, or until set.
- Lightly dust with matcha powder before serving. Enjoy chilled.
