Crispy Two Layer Onigirazu

Ingredients

  • 2 large nori sheets
  • 2 1/2 rice papers
  • 1 cup cooked rice
  • 1/2 avocado, sliced
  • 1 tbsp furikake
  • 1 egg, cooked (fried or scrambled)
  • 3 tbsp tuna
  • 5 slices cucumber
  • Cooking oil

Instructions

  1. Lightly soak two rice papers and slightly overlap them, then top with 2 nori sheets on the rice papers. Make one cut from the bottom edge toward the center, and another halfway across from the opposite side to create folding sections.
  2. Add fillings in sections: start with furikake rice, then avocado, tuna, egg, cucumber, and finish with rice to help hold everything together.
  3. Fold each section over itself to form a compact sandwich. Seal the open side with the remaining half sheet of rice paper.
  4. Pan-fry in lightly oiled pan over medium heat until crispy on all sides. Cut in half and enjoy.
