Sushi Egg Sando

Ingredients

  • 1 egg
  • 2 small seaweed (nori) sheets
  • ¼ cup cooked rice
  • 1 tbsp furikake
  • 1 mini cucumber, sliced into strips
  • ½ can tuna
  • ½ avocado, sliced
  • Salt & pepper, to taste

Instructions

  1. Mix the furikake into the cooked rice and set aside.
  2. Whisk the egg with a pinch of salt and pepper. Heat a pan over medium-high heat and pour in the egg, spreading it into a thin layer.
  3. While the egg is still slightly soft on top, place the two seaweed sheets side by side directly onto the egg so they stick.
  4. Once the egg is set, fold the sides inward to create a long strip with the seaweed attached.
  5. Add a layer of seasoned rice, then cucumber, tuna, and avocado down the center. Fold it up and enjoy!
