Ingredients
- 1 bunch enoki mushrooms
- 1 bunch spinach
- Water (for boiling)
- 1/4 cup toasted sesame seeds
- 1 tbsp white miso paste
- 1 tbsp minced garlic
- 1 tsp sugar
- 1 tbsp soy sauce
- 1 tbsp mirin
- 1/2 tbsp vinegar
- 1/4 cup hot water
- Toasted sesame seeds (for garnish)
Instructions
- Bring a pot of water to a boil. Add the enoki mushrooms and cook until tender. In the same pot, blanch the spinach briefly until just wilted.
- Transfer both to an ice bath to stop the cooking, then squeeze out any excess water and set aside.
- In a bowl, combine the toasted sesame seeds, miso paste, garlic, sugar, soy sauce, mirin, vinegar, and hot water. Mix until smooth to create the miso sesame marinade.
- Add the spinach and enoki to the bowl and toss until evenly coated.
- Garnish with extra toasted sesame seeds and enjoy!
