Ingredients
- 1 large seaweed sheet
- 1/3 cup cooked rice
- 1 king oyster mushroom
- 1 enoki mushroom
- 1 maitake mushroom
- 2 shiitake mushrooms
- 1/3 cup microgreens
- 1/2 avocado
- 1/2 omelette
- 2 tbsp kimchi- salt and pepper
- Furikake (for garnish)
Instructions
- Sear the mushrooms in a pan until golden brown, then set aside.
- Prepare an omelet and slice it into portions.
- Lay a large nori sheet flat and make a cut halfway through from the bottom to the center, do not cut all the way.
- In each quadrant of the nori sheet, place the ingredients as follows: rice in one, seared – mushrooms in another, omelet and kimchi in the next, and microgreens with avocado in the last.
- Fold each quadrant over the next, wrapping it into a compact layered wrap.
- Secure with plastic wrap or parchment paper, then slice in half.
- Garnish with furikake and enjoy!
