Mushroom Wrap

Ingredients

  • 1 large seaweed sheet
  • 1/3 cup cooked rice
  • 1 king oyster mushroom
  • 1 enoki mushroom
  • 1 maitake mushroom
  • 2 shiitake mushrooms
  • 1/3 cup microgreens
  • 1/2 avocado
  • 1/2 omelette
  • 2 tbsp kimchi- salt and pepper
  • Furikake (for garnish)

Instructions

  1. Sear the mushrooms in a pan until golden brown, then set aside.
  2. Prepare an omelet and slice it into portions.
  3. Lay a large nori sheet flat and make a cut halfway through from the bottom to the center, do not cut all the way.
  4. In each quadrant of the nori sheet, place the ingredients as follows: rice in one, seared – mushrooms in another, omelet and kimchi in the next, and microgreens with avocado in the last.
  5. Fold each quadrant over the next, wrapping it into a compact layered wrap.
  6. Secure with plastic wrap or parchment paper, then slice in half.
  7. Garnish with furikake and enjoy!
