Avocado Shrimp Frittata

Ingredients

  • 10 shrimp, peeled
  • 3 cups shredded cabbage
  • 2 avocados, sliced
  • 3 eggs
  • 1/2 cup chicken stock
  • Salt and pepper, to taste
  • Sesame seeds, for garnish
  • Cooking oil

Instructions

  1. Season the shrimp with salt and pepper.
  2. In a pan, heat a little cooking oil and sear the shrimp until cooked through, then set aside.
  3. In the same pan, add the shredded cabbage and cook until slightly softened. Pour in the chicken stock, cover, and let it steam for 2–3 minutes.
  4. Add the cooked shrimp and sliced avocado, then cover and cook for another 2–3 minutes.
  5. Garnish with sesame seeds and enjoy!
