Ingredients
- 1 large ripe banana, mashed
- 1/4 cup coconut milk
- 1/4 cup coconut oil, melted
- 1/2 cup coconut sugar (or brown sugar)
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1 bar dark chocolate
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix the mashed banana, coconut milk, melted coconut oil, coconut sugar, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Add the dry ingredients to the wet mixture, stirring until just combined. Fold in chocolate chips.
- Scoop the dough onto the baking sheet.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow cookies to cool before enjoying.
