Brown Butter Caramelized Onion Pasta
Ingredients
- Pasta of your choice
- 2 large brown onions
- 3 tbsp minced garlic
- 100g butter
- 100g cream
- 3 tbsp Calabrian pepper sauce
- 3 tbsp shaved parmesan
- S&P
- Fresh parsley
Instructions
- In a pan over medium-high heat, melt the butter and cook until it foams and turns brown, stir regularly. Remove from heat, strain, and set aside.
- Return the strained brown butter to the pan and add the chopped onions with a pinch of salt. Cook over medium heat, stirring frequently, until the onions are caramelized.
- Meanwhile, cook the pasta on the side.
- Once the onions are caramelized, add the Calabrian pepper sauce, minced garlic, cream, and shaved parmesan. Sauté for an additional 2 minutes.
- Add the cooked pasta to the sauce, along with some reserved pasta water, adjusting as needed to get your desired consistency.
- Garnish with finely chopped fresh parsley.
