Brown Butter Caramelized Onion Pasta

Ingredients

  • Pasta of your choice
  • 2 large brown onions
  • 3 tbsp minced garlic
  • 100g butter
  • 100g cream
  • 3 tbsp Calabrian pepper sauce
  • 3 tbsp shaved parmesan
  • S&P
  • Fresh parsley

Instructions

  1. In a pan over medium-high heat, melt the butter and cook until it foams and turns brown, stir regularly. Remove from heat, strain, and set aside.
  2. Return the strained brown butter to the pan and add the chopped onions with a pinch of salt. Cook over medium heat, stirring frequently, until the onions are caramelized.
  3. Meanwhile, cook the pasta on the side.
  4. Once the onions are caramelized, add the Calabrian pepper sauce, minced garlic, cream, and shaved parmesan. Sauté for an additional 2 minutes.
  5. Add the cooked pasta to the sauce, along with some reserved pasta water, adjusting as needed to get your desired consistency.
  6. Garnish with finely chopped fresh parsley.
