Cinnamon Roll Pancake

Ingredients

  • 1 cup flour
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1 cup coconut milk (or any plant milk)
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
    For the cinnamon butter:
  • 2 tbsp vegan butter, melted
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon

Instructions

  1. In a bowl, whisk flour, baking powder, sugar, and salt.
  2. Add coconut milk, oil, and vanilla; stir until smooth.
  3. Heat a non-stick pan over medium heat. Pour batter to form pancakes.
  4. For the cinnamon butter, mix melted butter, brown sugar, and cinnamon.
  5. Drizzle the cinnamon brown sugar butter over the pancakes and swirl. Serve warm.
