Ingredients
- 1 cup flour
- 1 tbsp baking powder
- 1 tbsp sugar
- 1/4 tsp salt
- 1 cup coconut milk (or any plant milk)
- 2 tbsp coconut oil
- 1 tsp vanilla extract
For the cinnamon butter: - 2 tbsp vegan butter, melted
- 2 tbsp brown sugar
- 1/2 tsp cinnamon
Instructions
- In a bowl, whisk flour, baking powder, sugar, and salt.
- Add coconut milk, oil, and vanilla; stir until smooth.
- Heat a non-stick pan over medium heat. Pour batter to form pancakes.
- For the cinnamon butter, mix melted butter, brown sugar, and cinnamon.
- Drizzle the cinnamon brown sugar butter over the pancakes and swirl. Serve warm.
