Ingredients
- 2 large potatoes
- 2 tbsp butter
- Lots of garlic
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1/2 tbsp spicy bean paste (dou ban jiang)
- 1/4 tsp sugar
- 1 tsp corn starch
- 1 cup chicken stock
- Red chili peppers
- Fresh rosemary and thyme
Instructions
- Peel the potatoes and use a cookie cutter to shape them into cylinders. Score both sides of each potato.
- Heat oil in a skillet and sear the potatoes on both sides until they are golden brown.
- Add 2 tbsp of butter to one side of the pan, then add the garlic and red chili peppers. Cook for about 2 minutes until fragrant.
- Add the seasonings sauce – soy sauce, oyster sauce, sugar, corn starch, and chicken stock. Top with fresh rosemary and thyme for the aromatics.
- Simmer on medium-low heat until the potatoes are fork-tender.
