Fondant Potato

Ingredients

  • 2 large potatoes
  • 2 tbsp butter
  • Lots of garlic
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1/2 tbsp spicy bean paste (dou ban jiang)
  • 1/4 tsp sugar
  • 1 tsp corn starch
  • 1 cup chicken stock
  • Red chili peppers
  • Fresh rosemary and thyme 

Instructions

  1. Peel the potatoes and use a cookie cutter to shape them into cylinders. Score both sides of each potato.
  2. Heat oil in a skillet and sear the potatoes on both sides until they are golden brown.
  3. Add 2 tbsp of butter to one side of the pan, then add the garlic and red chili peppers. Cook for about 2 minutes until fragrant.
  4. Add the seasonings sauce – soy sauce, oyster sauce, sugar, corn starch, and chicken stock. Top with fresh rosemary and thyme for the aromatics.
  5. Simmer on medium-low heat until the potatoes are fork-tender.
