Fried Sea Beam

Ingredients

Fish Marinade

  • 1 sea bream
  • 1/4 cup ginger juice
  • 4–5 slices ginger
  • 2 tbsp Shaoxing wine
  • 1 scallion
  • White pepper
  • Salt

Batter

  • 1/2 cup flour
  • 1/2 cup potato starch
  • 1 tbsp baking soda
  • 1/4 cup neutral oil
  • 1 tsp salt
  • 1/2 cup water

Sauce

  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tbsp vinegar
  • 1 tbsp Shaoxing wine
  • 1/4 tsp white pepper powder
  • 1 tsp brown sugar
  • 3/4 cup water
  • Chili and scallions to taste

Instructions

  1. Marinate the fish for at least 30 minutes.
  2. Coat the fish thoroughly in the batter and fry until golden and crispy.
  3. Bring the sauce to a simmer and serve with the fried fish.
