Ingredients
Fish Marinade
- 1 sea bream
- 1/4 cup ginger juice
- 4–5 slices ginger
- 2 tbsp Shaoxing wine
- 1 scallion
- White pepper
- Salt
Batter
- 1/2 cup flour
- 1/2 cup potato starch
- 1 tbsp baking soda
- 1/4 cup neutral oil
- 1 tsp salt
- 1/2 cup water
Sauce
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp oyster sauce
- 1 tbsp vinegar
- 1 tbsp Shaoxing wine
- 1/4 tsp white pepper powder
- 1 tsp brown sugar
- 3/4 cup water
- Chili and scallions to taste
Instructions
- Marinate the fish for at least 30 minutes.
- Coat the fish thoroughly in the batter and fry until golden and crispy.
- Bring the sauce to a simmer and serve with the fried fish.
