Honey Garlic Roasted Potatoes
Ingredients
- 2 lbs russet potatoes
- Neutral oil or duck fat
- 3 sprigs rosemary, chopped
- 1/2 tsp baking soda
- Zest of 1 lemon
- 4-5 garlic cloves, minced
- Olive oil
- Honey
- Parmesan
- Parsley and flaky salt, for garnish
Instructions
- Preheat oven to 390°F.
- Boil potatoes in salted water with baking soda for 15 minutes until fork-tender. Drain, return to the pot, cover, and shake to rough up edges. Let dry for 15 minutes.
- Mix garlic, rosemary, lemon zest, olive oil, salt, and pepper in a bowl.
- Heat oil or fat in a baking pan in the oven for 15-20 minutes.
- Carefully add potatoes to the hot fat, toss to coat, and roast for 1-1.5 hours, tossing every 20-30 minutes.
- Add garlic-rosemary oil 30 minutes before the end, toss, and finish baking.
- Drizzle with honey, sprinkle parmesan, parsley, and flaky salt, and serve!
