Ingredients
- 1 salmon
- Assorted mushrooms (oyster, king oyster, shiitake)
- 1 cup leftover rice
- Scallions, fried shallots, sesame seeds
- Miso broth (1 cup water, 1 tbsp each dashi, soy sauce, sugar, 1 tbsp miso paste)
- 1 tbsp butter
- 1 tsp salt
Instructions
- Heat a pan with butter over high heat, then press rice into the pan. Lower heat to medium and cook until the bottom is golden brown.
- Sauté mushrooms in the same pan, seasoning with salt.
- Prepare miso broth: boil water with dashi, soy sauce, and sugar, then whisk in miso paste.
- Top crispy rice with mushrooms, salmon, scallions, fried shallots, and sesame seeds. Drizzle with miso broth (2-3 tbsp).
- Mix well and enjoy!
