Ingredients

  • 2 cups rigatoni pasta
  • Water (for boiling)
  • 1 tsp salt
  • Olive oil
  • Salt and pepper
  • Parmesan cheese
  • 1 tomato, diced
  • 1 shallot, chopped
  • Cilantro, chopped
  • Melted cheddar cheese
  • 1 cup guacamole

Instructions

  1. Cook Pasta: Boil rigatoni in salted water until al dente. Drain.
  2. Season and Bake: Transfer pasta to a baking pan. Toss with olive oil, salt, pepper, and Parmesan. Place pasta on a baking sheet.
  3. Bake: Bake at 400°F for 25–30 minutes, keeping a close eye to prevent over-crisping.
  4. Prepare Toppings: Warm cheddar cheese and mix tomato, shallot, and scallions for a quick salsa.
  5. Assemble: Top the baked rigatoni with melted cheese, salsa, and a generous scoop of guacamole.
