Taiwanese Fried Chicken

Ingredients

  • 1 chicken breast
  • 1 bag Calbee Shrimp Chips
  • 1 bag Calbee Hot & Spicy Chips
  • Salt and pepper
  • 2 eggs
  • 1/2 cup potato starch
  • Cooking oil for frying

Spice Mix

  • 2 tbsp minced garlic
  • 1 tbsp soy sauce
  • 1 tbsp shaoxing wine
  • 1 tbsp oyster sauce
  • 1/2 tsp five-spice powder
  • 1/4 tsp white pepper
  • 1/4 tsp sugar

Instructions

  1. Slice the chicken breast in half without cutting all the way through, then pound it flat.
  2. Marinate the chicken in the spice mix for 30 minutes.
  3. For the coating, crush the Calbee Shrimp Chips and mix with potato starch, salt, and pepper.
  4. Coat the marinated chicken evenly in the beaten egg then chip mixture.
  5. Heat oil in a pan over medium-high heat, then fry the chicken until golden brown, making sure the internal temperature reaches 165°F.
  6. Remove from the pan, and sprinkle with crushed Calbee Hot & Spicy Chips for extra flavor.
