Coffee Toast

Ingredients

  • 4 Chimei buns (If regular bread, preferably day-old or slightly stale)
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup coffee
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • A pinch of salt
  • Butter or oil for frying
  • Maple syrup, sugar and ground cinnamon for coating

Instructions

  1. If using frozen Chimei buns, allow them to thaw at room temp.
  2. In a bowl, whisk together the eggs, milk, coffee, vanilla extract, cinnamon, and a pinch of salt until well combined.
  3. Dip the buns into the egg mixture, letting them sit for 2-3 minutes to fully absorb the flavors.
  4. Heat a skillet over medium heat and add butter or oil to coat the surface.
  5. Place the soaked buns onto the hot skillet. Cook for about 2-3 minutes on each side, or until golden brown and crispy.
  6. Once cooked, transfer the French toast to a bowl of cinnamon sugar mix. Coat well, then serve with maple syrup.
