Crispy Fried Enoki Mushroom

Ingredients

  • 2 packs Enoki mushrooms
  • Cooking oil
  • 1/4 cup basil
  • 8-10 garlic cloves (adjust to preference)
  • Chili seasoning (to taste)

Batter

  • 158g cornstarch
  • 79g all-purpose flour
  • 1 tbsp yeast
  • 1/2 tsp salt
  • 1/4 tsp white pepper powder
  • 1/2 tsp five-spice powder
  • 1/2 tsp baking powder
  • 2 tbsp chopped scallions
  • 340g cold water (adjust as needed for desired batter consistency)

Instructions

  1. Mix all batter ingredients well and refrigerate for 20-30 minutes.
  2. Cut the Enoki mushrooms laterally into thin strips.
  3. Dip the mushroom strips in the batter, then use a chopstick to squeeze out the excess.
  4. Place the mushrooms in a pan with hot oil and fry until golden brown.
  5. Fry the basil and garlic in the oil and then remove them.
  6. Plate the fried mushrooms and garnish with the fried basil, garlic, and chili seasoning.
