Crispy Ramen Pancake

Ingredients

  • 1 bag of instant ramen
  • 3 egg yolks
  • 1 can of Spam, cubed
  • 2 tbsp scallions, chopped
  • 1 egg

Instructions

  1. Separate the 3 egg yolks from the whites and set them aside.
  2. Cut the Spam into cubes and sear until golden brown.
  3. Boil the instant ramen, then transfer it to a large bowl.
  4. Add the ramen seasoning packets, chopped scallions, cubed Spam, and one egg to the bowl. Then, mix until well combined.
  5. Heat a pan over medium heat. Add the ramen mixture to the pan, forming circular shapes, and cook for 1-2 minutes.
  6. Create a small circular indentation in the center of each ramen pancake and place an egg yolk in the spot.
  7. Cover the pan with a lid and cook for an additional 3-4 minutes, until the bottom is crispy.
  8. Once the ramen pancake is golden and crisp, remove it from the pan and serve warm.
