Mango Salmon Salad

Ingredients

  • 3 cups arugula
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup red onions, diced
  • 2 avocados, diced
  • 1 mango, diced
  • 1 cup quinoa, cooked
  • 2 salmon filets, cubed
    Salt & pepper to taste

Dressing

  • 1 tbsp minced garlic
  • 2 tbsp extra virgin olive oil
  • 1 tbsp yuzu sauce
  • 1 tbsp mustard
  • 1 tbsp honey
  • A sprinkle of pepper

Instructions

  1. Heat 2 tablespoons of cooking oil in a pan over medium heat. Sear the cubed salmon until crispy on all sides. Season with salt and pepper.
  2. In a large bowl, combine all the salad ingredients. Add the dressing and toss everything together until well combined.
