Ingredients
- 10 sheets of rice paper
- 2 mini eclairs (Delizza brand)
- Granulated sugar to sprinkle
Egg Mixture
- 3 eggs
- 25g milk
- 30g powdered sugar
- 20g melted butter
- 2.5g double-acting baking powder
- 1 tsp vanilla extract
Matcha Option
- 3 tbsp hot water
- 1 tbsp matcha powder
Instructions
- Prepare the egg mixture by combining all the listed ingredients. If you’d like to make a matcha version, mix the matcha powder with hot water and add it to the egg mixture after making the first croissant. The egg mixture will be enough for 2 croissants.
- For each croissant, layer 5 sheets of rice paper on top of each other. Cut them into 3 parts as shown in the video.
- Stack the cut rice papers and place a mini eclair in the center. Fold the rice paper to enclose the eclair.
- Sprinkle granulated sugar on top and bake at 350°F (175°C) for 25 minutes.
