Tomato Peanut Dip

Ingredients

  • 5 chicken buns
  • 2 cups roasted peanuts
  • 5 tomatoes
  • 18 cherry tomatoes
  • 1 tsp salt
  • 5 shallots
  • 2 heads of garlic
  • 6 Thai chilies (adjust to taste)
  • 1 tsp sugar
  • 1 tbsp EVOO

Instructions

  1. Roast the tomatoes and garlic in the oven at 450°F for 20 minutes.
  2. Using a mortar and pestle, grind the peanuts then the shallots.
  3. Add the roasted tomatoes and Thai chilies to the mix.
  4. Season with salt, sugar, and EVOO, then grind everything until well combined.
  5. Serve with rice or chicken buns.
