Citrus Peels Sour Candies

Ingredients

  • Organic citrus fruits (I use orange, mandarin oranges, blood orange, lemon, lemon and pomelo)
  • Sugar Syrup: (1 cups sugar, 1 cup water)
  • Coating: (2 tbsp citric acid, 1/2 cup sugar)

Instructions

  1. Wash the citrus fruits. Peel and try to get as much of the peel as possible.
  2. Cut the peels into thin strips.
  3. In a pot, boil the citrus peels in water for 20 mins or until they become translucent. This removes the bitterness.
  4. In a saucepan, combine equal parts water and sugar and bring to a boil.
  5. Add the citrus peels to the boiling syrup and for about 15-20 minutes.
  6. Remove citrus peels from the syrup and place them on a wire rack to cool and dry.
  7. In a bowl, add a mix of sugar and citric acid. Then, coat the citrus peels.
  8. Once the citrus peels start to crystallize, store them in an airtight container at room temperature.
