Ingredients
- 3 eggs
- 1 tsp sugar
- 2 tbsp heavy cream
- 1/2 tsp salt
- 2 tbsp shredded mozzarella cheese
- 1 lobster
- Butter
Instructions
- Separate the egg yolks from the whites.
- In a stand mixer or with a hand mixer, whisk the egg whites with the sugar and salt until stiff peaks form
- In a small bowl, beat the egg yolks with the heavy cream.
- Gently fold the yolk mixture into the beaten egg whites.
- In a pan, sear the lobster with butter.
- Heat the same pan over medium-low heat and add butter.
- Pour the egg mixture into the pan, cover with a lid, and cook for 2 minutes.
- Once the bottom starts to crisp, sprinkle mozzarella cheese and add lobster pieces.
- Fold the omelette in half and cook for another 1-2 minutes and enjoy!
