Marry Me Chicken

Ingredients

  • 4 chicken legs
  • 3-4 slices of ginger
  • 1 scallion
  • Goji berries/dates
  • Shaoxing wine

Sauce

  • 10 cloves of garlic
  • Scallions
  • Salt to taste
  • 1 tbsp brown sugar
  • 2 tbsp shallot oil
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce

Instructions

Method 1

  1. Steam the chicken with slices of ginger for about 25 minutes.
  2. Place a small bowl upside down in the middle of the plate with goji berries and dates to collect chicken soup from the steaming.

Method 2

  1. Poach the chicken with ginger slices, scallion, and Shaoxing wine for about 20 minutes. Use a thermometer to ensure chicken is cooked.
  2. Transfer the chicken to an ice bath to shock.
  3. Prepare the garlic shallot oil sauce and serve with the chicken.
